When a flour page says W 260-280, it is reporting the work needed to inflate a standard piece of dough into a bubble until it breaks. On an alveograph chart, W is the area under the line.
So W is a dough-test result. It is different from protein, and it is not a score for how good a pizza flour will be. The rest of the chart, especially P, L and P/L, gives the number its shape. Your recipe, fermentation plan and oven still matter when you choose a bag.
Picture the test: a dough bubble and its curve
In an alveograph test, a prepared dough disc is inflated with air until the bubble ruptures. The machine draws a curve as the dough resists and then stretches. You do not need to run this test to make pizza, but the picture makes the label easier to read.

P/L = the balance between curve height and length
P is the high point on the curve. L is how far the curve travels before the bubble breaks. W is the total area beneath it. P/L is the relationship between the height and length of that same curve. They come from one test, so they make more sense together than as isolated figures.
What P, L, W and P/L each mean

It is tempting to treat W as the shortcut because it is the figure most often printed in a product description. It is still a partial description of the curve. When a maker supplies P/L as well, you have more of the test to read. When it does not, keep the W figure, but avoid turning the missing detail into a guess.
How to read a W number on a flour listing
Start by checking that the figure belongs to the exact product in front of you. A W range for one flour does not automatically apply to every flour from the same maker, or every bag labelled 00.
Then read the W number as a manufacturer-published product detail. A range such as 260-280 W is useful context, but it does not promise a particular crust or fermentation result in your kitchen.
If the product page also gives P/L and says how the figure was measured, keep those details with the W value. If it does not, that is simply less information to work with. Do not try to recreate P/L from the protein percentage or from the flour's type name.
Finally, return to the decision you are actually making. The recipe, any product guidance, protein content, fermentation plan and oven tell you more about how you intend to use the flour. W is only one part of that picture.

Ranges are normal on product pages. The four reviewed pages list W, but do not say which alveograph method was used. Read these as the makers' own published specifications, rather than a laboratory-matched comparison.
The table is useful for seeing how a published W range looks on a real product page. It is not a ladder. The order does not identify a winner, and a larger figure is not a reason to skip the rest of the product information. If the product name, formula or market changes, check the maker's current page before carrying an old number into a recipe decision.

Is a higher W better?
