Falling Number is the time, in seconds, for a stirrer to fall through a heated flour-and-water paste. More alpha-amylase activity breaks down starch, making the paste thinner. The stirrer drops sooner, so the number is lower. With less activity, the paste stays thicker, the stirrer takes longer to fall, and the number is higher.
It is one narrow reading of starch and enzyme activity. Mills and technical buyers use it when they need that context. For a pizza maker choosing flour, it usually belongs behind the recipe, flour type, protein and the maker's own guidance.

The name becomes much less mysterious when you picture a small stirrer moving through paste.

The direction can feel backwards at first. A smaller number means a shorter fall in this test, which points to more alpha-amylase activity. A larger number means the stirrer spent more seconds moving through a thicker paste. It does not mean "more enzyme."
Why mills and commercial bakers care
Sprouting and enzyme activity can affect how wheat and flour behave during processing. Mills can use Falling Number when screening wheat or aiming for a consistent flour specification. Start with the recipe and the exact flour it calls for. Then look at the flour type and published protein, plus any guidance the manufacturer gives for pizza.
